I have already noted that those of us lucky enough to travel in South East Asia often seek out and appreciate regional. variations in Chinese cooking. Even in small, tropical towns Chinese food is likely to be safe and of excellent quality. We recently had quite superb quality gourmet standard Chinese food in the small regional centre of Brastaggi in Northern Sumatra. The excellent four course luncheon cost less than SNZ2.OO a head! Why was it so superb? It was served at a spotlessly clean table. It was hot. It was lovingly served with meticulous manners. The fried noodles were freshly made. The frogs were very large — almost the size of small rabbits, very lean and meltingly tender. The rice dish floating airily had lightly cooked garlic prawns and the bright green vegetables were crunchy — blanched long enough in boiling water only to sterilise them.
